The Good Stuff that Happens at 11 p.m.

There was a time when I started this blog with high hopes that it would become a consistent thing in my life — kind of like my love for potato chips and bacon.  The problem is life gets in the way.  I am not bothered by the number of people following me or the number of likes I get here. That kind of virtual affirmation I only crave for in Instagram nowadays. After all, the number of likes we get acts like a power up to one’s self-confidence and a verification that we exist and matter. Take that statement however you want to take it — a bit of sarcasm with a teaspoon of truth perhaps? So here I am again in my blog which really needs an overhaul (like my closet clamoring for the KonMari method). I write to clear my thoughts, to have an excuse to drink my cup of coffee, and take a break away from the kids.

I need time. Just a few more hours during the day to burn all my creative juices.  My sister calls me a serial hobbyist. I call it a refusal to grow old and boring. I have always leaned heavily on my artistic side. I enjoy beautiful things and see things in a different albeit weird way. I think abstractly and yes, have conversations in my head that keep me awake at night. Don’t worry these conversations are very well managed and all “we” talk about are to-do lists, art stuff, work, and how to just be quiet so I, the chairman of the board, can sleep.

At 11 p.m., the wonderful husband hears me clamoring for some flourless cookies. This is his recipe. You can replace the white chocolate chips anytime to be Paleo compliant. It needed to be wife compliant last night, hence the white chocolate.

Moist White Chocolate Chip Cookie

Ingredients:
1 cup almond flour
¼ tsp Himalayan salt
⅛ tsp baking soda
3 tbsp melted butter
2 tbsp pure maple syrup
1½ tsp vanilla

*chocolate (morsels or chopped)

Steps: 

  1. Preheat the oven to 350 degrees.
  2. Mix the almond flour, salt, baking soda, maple syrup, butter, and vanilla.
  3. Add the chocolate morsels.
  4. Bake for 10-15 minutes.
  5. Take it out of the oven and let it cool for 5 minutes before chomping.
